Beef Stroganoff - cooking recipe

Ingredients
    6 Tbsp. butter
    2 Tbsp. onion, minced
    2 lb. beef tenderloin
    1/2 lb. mushrooms, sliced
    1/8 tsp. nutmeg
    freshly ground pepper
    1 c. sour cream
Preparation
    Melt 3 teaspoons butter in a heavy skillet.
    Add the onion and cok slowly until transparent.
    Remove and set aside.
    Cut the beef in 1 inch by 2 1/2 inch strips.
    Turn the heat to medium-high; add the beef and cook briefly, turning brown on all sides.
    Remove the beef and set aside with the onions. Add the remaining 3 tablespoons butter to the skillet.
    Stir in the mushrooms, cover and cook 3 minutes.
    Season with pepper and nutmeg.
    Whisk the sour cream and add to the pan, but do not allow it to boil. Return the beef and onions to the pan and just heat through. Yield: 6 servings.
