Lime Parfait Pie - cooking recipe

Ingredients
    1 3-ounce package of lime flavored Jell-O
    1/2 cup boiling water
    3/4 teaspoon finely shredded lime peel
    1/4 cup lime juice
    1 pint vanilla ice cream
    1 9-inch baked pastry shell (I usually use a graham cracker crust instead)
    1 cup whipping cream (I usually use Cool Whip instead)
Preparation
    In a large bowl dissolve gelatin in boiling water.
    Stir in lime peel and lime juice.
    Add ice cream by spoonfuls, stirring until melted.
    Chill till partially set (the consistence of unbeaten egg whites).
    Whip the 1 cup whipping cream and fold into lime mixture.
    Chill till mixture mounds when spooned.
    Turn into baked pastry shell.
    Chill several hours or overnight until set. To serve, top with unsweetened whipped cream and maraschino cherries if desired.
    Cover and chill to store.
    Makes 8 servings.
