Soubise - cooking recipe

Ingredients
    1/2 c. rice
    2 qt. boiling water
    1 Tbsp. salt
    6 Tbsp. butter or margarine
    2 lb. (7 c.) onions, chopped
    1/4 to 1/2 c. sour cream
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 to 1/2 c. chopped parsley
    3/4 c. shredded cheese
Preparation
    Place salt in water; bring to a boil.
    Add rice.
    Cook 5 minutes.
    Drain and place in ovenproof casserole.
    Melt butter in skillet; add onions and saute onions until soft.
    Add to rice; stir.
    Cover tightly and bake at 300\u00b0 for 1 hour.
    Remove from oven; add sour cream, cheese, parsley, salt and pepper to taste. Good hot or cold.
