Corny Rice - cooking recipe
Ingredients

1/4 c. chopped sweet red pepper
1/4 c. chopped onion
2 Tbsp. finely chopped jalapeno pepper
1 Tbsp. olive or vegetable oil
2 c. cooked rice
1 c. frozen corn
1/2 tsp. salt
1/4 tsp. pepper
3 green onions, chopped
soy sauce (optional)
Preparation

In a large skillet, saute the red pepper, onion and jalapeno in oil until tender. Add the rice, corn, salt and pepper. Cook and stir until heated through. Sprinkle with green onions. Serve with soy sauce, if desired. Yields 4 servings.
