Smoked Salmon-Parsnip Rounds - cooking recipe

Ingredients
    3 parsnips (about 3/4 lb.)
    1/4 tart apple
    1/4 small onion
    1/3 c. flour
    2 eggs
    1 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. butter
    1/4 c. vegetable oil
    1/4 lb. smoked salmon
    chives or dill sprigs for garnish
    3/4 c. creme fraiche or sour cream
Preparation
    Preparation:
    Peel and coarsely grate parsnips into a bowl. Grate in apple and onion.
    Toss and sprinkle on flour.
    Lightly beat the eggs and add.
    Add salt and pepper and toss to combine well.
