Ingredients

1/2 c. cornmeal
1/2 c. quick Quaker oats (uncooked)
1 Tbsp. vegetable oil
1 egg
1 tsp. baking powder
1 c. milk
1/4 tsp. baking soda
pinch of salt
1 banana (well ripened), thinly sliced
Preparation

Mix all ingredients together, except banana, and whisk until just blended.
Fold in banana slices.
Cook on lightly oiled or buttered pan.
Yields 8 to 12, approximately 4 inches.
