Club Chicken Casserole - cooking recipe

Ingredients
    1/4 c. oleo
    1/3 c. chopped onion
    1/3 c. flour
    1/2 tsp. salt
    dash of pepper
    1 large can evaporated milk
    1 c. chicken broth
    2 c. cubed chicken
    3 c. cooked rice
    1/3 c. diced pimiento
    1/3 c. parsley
Preparation
    Melt oleo.
    Add onion.
    Stir until limp.
    Add flour.
    Cook 1 minute.
    Stir in broth, milk, salt and pepper.
    Stir constantly until thick.
    Grease an 11 x 8-inch casserole.
    Add rice; mix in chicken and pimiento.
    Add sauce and mix.
    Shake parsley over. Bake, uncovered, at 400\u00b0 for 30 minutes.
