Mexican Cornbread - cooking recipe

Ingredients
    1 c. cornmeal plus 2 Tbsp.
    1/2 tsp. salt
    3/4 tsp. soda
    1/2 c. cream-style corn
    7/8 c. buttermilk
    2 eggs (1 large egg okay)
    4 oz. grated cheese
    1 medium onion, chopped
    2 1/2 Tbsp. seeded, chopped jalapeno peppers from jar
    3 Tbsp. bacon drippings
Preparation
    Mix cornmeal and salt.
    Add soda to buttermilk and combine with cornmeal.
    Add eggs and mix thoroughly.
    Heat bacon grease in 9-inch iron skillet or 8-inch square pan.
    Pour half of batter into pan, sprinkle half of cheese over it, then pour in rest of batter.
    Top with rest of cheese.
    Bake at about 400\u00b0 for about 35 minutes.
