Red Potato Salad - cooking recipe
Ingredients

2 lb. red potatoes, scrubbed and halved
1/2 lb. bacon, chopped
1/2 c. onions
1/4 c. olive oil
1/2 c. red wine vinegar
1 c. fresh parsley, chopped
1/2 c. red onion
1/2 c. celery, chopped
Preparation

Boil potatoes until tender; drain and cut into bite size pieces.
Fry bacon until crisp and reserve.
Saute onions in bacon drippings until soft.
Pour onions and drippings over hot potatoes.
Add oil, vinegar, parsley, red onion, celery and crumbled bacon.
Toss gently, but thoroughly.
Salt and pepper to taste.
