Orange Sweet Potato Bowl - cooking recipe

Ingredients
    6 medium size sweet potatoes or yams, pared and quartered (3 lb.)
    6 Tbsp. (3/4 stick) butter or margarine
    3 Tbsp. brown sugar
    1/4 c. orange juice
Preparation
    Cook potatoes or yams in boiling salt water about 15 minutes, or just until tender.
    Drain them; shake pan gently over low heat 2 or 3 minutes to dry potatoes.
    Mash potatoes well.
    Stir in butter, brown sugar and orange juice, then whip with fork until fluffy.
    Spoon into serving dish; garnish with fresh orange sections and parsley, if you wish.
