Italian-Style Fish And Vegetables - cooking recipe

Ingredients
    2 Tbsp. olive or vegetable oil
    1 medium onion, sliced
    2.5 oz. jar sliced mushrooms, drained
    1/2 tsp. basil leaves
    1/2 tsp. fennel seed
    2 c. frozen mixed vegetables
    1 1/2 lb. fresh or frozen catfish or sole fillets
    1/4 tsp. salt
    1/4 tsp. pepper
    2 medium tomatoes, sliced
    1/3 c. grated Parmesan cheese
Preparation
    In a large skillet over medium heat, heat oil.
    Add onion mushrooms, basil and fennel seed.
    Cook 4 minutes or until onion is tender.
    Stir in frozen vegetables.
    Place fish over vegetables.
    Sprinkle with Parmesan cheese.
    Cover.
    Let stand about 3 minutes or until Parmesan cheese is melted.
    Serves 6.
