Artichoke Frittata - cooking recipe
Ingredients

2 (6 oz.) jars marinated artichoke hearts
1 bunch green onions, chopped
1 garlic clove, minced
4 eggs, beaten
1/2 c. crushed saltines
3/4 tsp. oregano
salt and pepper to taste
6 dashes Tabasco sauce
2 c. mixed shredded cheese
Preparation

Drain juice from 1 jar of artichokes.
Use to saute onions and garlic.
Drain rest of artichokes and chop both jars.
Beat
eggs and add cracker crumbs, spices and Tabasco sauce.
Fold in onions, garlic,
cheese and chopped artichokes.
Mix well.
Pour into a 9 x 13-inch baking dish.
Bake for 30 minutes at 325\u00b0.
Cut into squares and serve warm.
Makes 40 to 50 squares.
