Potato Dumplings - cooking recipe

Ingredients
    3 1/2 c. boiled, riced potatoes
    2 eggs, lightly beaten
    1 tsp. salt
    1 c. flour
    1 Tbsp. onion, grated
Preparation
    Cool potatoes. Add eggs, salt, flour and onion.
    Mix and knead lightly until smooth. (Add more flour if dumplings fall apart.) Shape into long thick roll. Cut in small pieces.
    Roll each piece into a dumpling. Cook in rapidly boiling salted water until they rise to the top. Simmer a few minutes longer until cooked through to center. Drain.
    Pour browned butter with onions over them.
