Ingredients

3 Tbsp. sugar
3 Tbsp. cornstarch
2 c. coconut milk, divided
1/8 tsp. salt
Preparation

Combine sugar and cornstarch in small bowl.
Blend in 1/2 cup coconut milk and salt.
Heat remaining 1/2 cup coconut milk in medium saucepan.
Do not let it boil.
Add cornstarch mixture. Cook and stir until thickened.
Pour into 8-inch square dish. Refrigerate until firm.
Makes 4 servings.
