Syrian Potato Salad - cooking recipe

Ingredients
    6 to 8 potatoes, boiled in skins
    1 clove garlic, crushed
    1 small bunch parsley, chopped
    3/4 c. fresh mint leaves, chopped
    1/3 c. oil
    1 lemon, juiced
    salt and pepper
Preparation
    Peel and dice the cooked potatoes.
    Mix together remaining ingredients and add to the potatoes.
    Mix and chill well before serving.
