Sweet And Sour Chicken - cooking recipe

Ingredients
    1 lb. chicken
    1 medium onion, chopped
    2 carrots, sliced thin
    1 medium green pepper, chopped
    20 oz. can pineapple chunks (undrained)
    1/4 c. white vinegar
    3 Tbsp. brown sugar
    3 Tbsp. ketchup
    1 Tbsp. cornstarch
    3 Tbsp. soy sauce
    1 tsp. ground ginger
    1 clove garlic, diced
Preparation
    Cut chicken into 1/2-inch pieces; brown in oil.
    Add onion and garlic.
    Cook 10 minutes; add carrots and green pepper.
    Combine all other ingredients, including the can of pineapple and juice. Cover and simmer 10 or more minutes.
    Serve over Minute rice.
