Mock Apricot Jam - cooking recipe

Ingredients
    6 c. peeled and grated zucchini squash
    6 c. water
    1/4 c. lemon juice
    1 (20 oz.) can crushed pineapple
    2 small boxes apricot gelatin
Preparation
    Simmer zucchini for 10 minutes.
    Add sugar, lemon juice, pineapple and gelatin.
    Continue to cook over low heat until sugar is dissolved.
    Put in sterilized jars and seal.
