Broccoli And Corn Scallop - cooking recipe
Ingredients

2 Tbsp. chopped onion
1 Tbsp. flour
1 1/4 c. milk
1 (8 oz.) pkg. shredded Monterey Jack cheese
1 (11 oz.) can whole kernel corn, drained
1/2 c. crushed Ritz cracker crumbs, divide them
2 (10 oz.) pkg. frozen broccoli spears, thawed and drained
2 Tbsp. butter or margarine
Preparation

Cook and stir onion in 1 tablespoon of butter in medium saucepan on medium heat. Blend in flour. Gradually add milk. Cook, stirring constantly, until thickened. Add cheese. Stir until melted. Stir in corn and 1/4 cup of the crumbs. Arrange broccoli in a 12 x 8 dish. Top with sauce. Mix remaining 1/4 cup of crumbs and 1 tablespoon of butter. Sprinkle over sauce in baking dish. Bake at 350\u00b0 for 30 minutes.
