Cornmeal Chicken - cooking recipe

Ingredients
    1 c. cornmeal
    1 1/2 c. bread crumbs
    1/4 tsp. celery seed
    1/4 tsp. thyme
    1/4 tsp. nutmeg
    4 chicken legs, whole
    1 c. flour
    4 beaten eggs
    salt and pepper
Preparation
    Preheat oil in fryer to 350\u00b0.
    Mix cornmeal, bread crumbs, herbs and spices in bowl; set aside.
    Place chicken in large pan, cover with water, season and bring to a boil.
    Skim water and cook, partially covered 20 to 22 minutes over low heat.
    Remove chicken from pan and trim skin away.
    Dredge chicken with flour and dip into beaten eggs coated with cornmeal.
    Deep fry 6 to 7 minutes.
