Rocky Mountain Potato Chowder(Delicious) - cooking recipe

Ingredients
    4 to 6 slices turkey bacon or pork bacon, chopped
    1 bunch green onions, thinly sliced (white parts and green tops separated)
    4 cans chicken broth
    3 to 4 large potatoes, peeled and 1/2-inch diced
    1 c. carrots, sliced
    1 bell pepper, seeded and diced
    2 medium zucchini, sliced
    1 c. corn kernels
    1 tsp. dried thyme leaves
    2 c. diced turkey or chicken
    2 c. low-fat milk + 2 Tbsp. cornstarch
    salt and pepper
Preparation
    In heavy stew pot over medium heat, brown bacon; drain.
    Add most of onions (reserve green parts for top of soup when finished).
    Cook and stir 1 minute.
    Add broth and potatoes; cover and cook 15 minutes.
    Add carrots; cook 5 minutes.
    Add rest of vegetables.
    Add turkey.
    Mix milk with cornstarch; add to pot. Bring to boil, stirring constantly about 1 minute, until soup slightly thickens.
    Season with salt and pepper.
    Serves 8. Decorate and slightly stir in minced green onion parts before stirring.
    Enjoy with cornbread or crackers.
