Zucchini Mexicana #2(Main Dish Casserole) - cooking recipe

Ingredients
    1/2 lb. lean ground beef
    4 to 6 zucchini
    1 to 2 large tomatoes, peeled and chopped
    1 onion, chopped
    1 large Anaheim chili, chopped (can use fresh or canned)
    1 Tbsp. chili powder
    1 c. (+/-) whole kernel corn
    1 to 2 c. cooked rice
    grated cheese (if desired)
Preparation
    Crumble and brown beef in large skillet or wok.
    Add all ingredients, except rice.
    Before serving, add rice and blend well. Cheese may be added if desired.
    Can be prepared ahead of time and put in casserole.
    Add grated cheese topping and bake until heated. Very popular at potlucks.
