Microwave Oatmeal Cake - cooking recipe

Ingredients
    1/2 c. quick cooking oats
    1/2 c. boiling water
    3/4 c. all-purpose flour
    1/2 c. sugar
    1/3 c. packed brown sugar
    1/2 tsp. soda
    1/2 tsp. salt
    1/2 tsp. cinnamon
    1/4 tsp. baking powder
    1/4 tsp. nutmeg
    1/3 c. shortening
    2 eggs
    3 Tbsp. water
    1/4 c. chopped nuts
Preparation
    Combine oats and boiling water. Set aside.
    Combine remaining ingredients in mixing bowl. Blend at low speed, then medium speed for 2 minutes. Beat in oats at low speed, 20 to 30 seconds.
    Pour into ungreased pan. Place pan on inverted saucer in microwave. Cook on Medium 5 to 6 minutes, rotating 1/4 turn every 3 minutes. Increase power to High.
    Microwave 2 to 6 minutes or until done. Let stand on countertop 5 to 10 minutes. Top with Caramel Topping.
