Eggplant Croquettes - cooking recipe

Ingredients
    2 medium eggplant
    1 clove garlic, chopped
    1 egg
    1 c. bread crumbs
    1/4 c. grated Italian cheese
    garlic powder
    salt and pepper
    fresh parsley, chopped
    marinara sauce
    Mozzarella cheese
Preparation
    Peel and cube eggplant; place in saucepan with salted water. Cook, covered, until tender (about 10 to 15 minutes).
    Drain well, squeezing out as much water as possible.
    Mash with potato masher. Stir in the egg, salt and pepper.
