Cherry Pudding - cooking recipe

Ingredients
    2 Tbsp. shortening
    2 c. sugar, divided
    1 c. milk
    2 tsp. baking powder
    1/4 tsp. salt
    1 tsp. vanilla
    2 c. flour
    1 (16 oz.) dark sour cherries (reserve juice)
    1 c. juice (from cherries, add water if needed)
Preparation
    Our Christmas Eve dinner always includes fish, a tradition from our Italian heritage.
    Both sides of the family join for the celebration.
    After dinner young and old alike await a special visit from Santa Claus.
