Tabbouleh (A Salad)(Yields 6 To 8 Servings) - cooking recipe

Ingredients
    1 c. bulgar wheat (preferably fine)
    2 c. minced fresh parsley
    1/2 c. scallions, sliced
    1/2 c. minced fresh mint
    1/2 c. fresh lemon juice
    1/2 tsp. grated lemon zest
    3/4 tsp. salt
    1/4 tsp. pepper
    1/4 c. olive oil
    2 tomatoes, peeled, seeded and diced
    romaine lettuce leaves
Preparation
    Wash bulgar.
    Cover with hot water and allow to stand for 30 minutes.
    Drain thoroughly and then squeeze dry with hands.
    Chop the vegetables and mix together.
    Beat in oil, lemon juice, salt and pepper.
    Mix with bulgar until well blended, then chill.
