Rice Vegetable Pilaf - cooking recipe

Ingredients
    1 medium onion
    2 c. rice
    4 cans chicken broth
    1 medium carrot
    1 medium zucchini
    1 bay leaf
    1 tsp. basil leaf
    1 tsp. dried thyme
    salt and pepper to taste
Preparation
    In a large pot combine onion and 2 tablespoons chicken broth until onions are tender.
    Shred carrot and zucchini.
    Add rice, rest of chicken broth, vegetables and seasonings.
    Bring to a rapid boil, stirring occasionally.
    Cover, reduce heat and cook for 20 minutes or until moisture is absorbed.
