Microwave Chicken Country Captain - cooking recipe

2 lb. meaty chicken pieces, skinned
14 1/2 oz. can stewed tomatoes
1 medium green or red pepper, chopped
1 clove garlic, minced
2 Tbsp. raisins
1 Tbsp. quick-cooking tapioca
2 to 3 tsp. curry powder
1/2 tsp. dried thyme, crushed
2 1/2 c. hot cooked rice
Preparation

Rinse chicken; pat dry.
Arrange pieces in 12 x 7 1/2 x 2-inch baking dish, with meaty portions toward the edges of the dish.
In mixing bowl, combine undrained tomatoes, pepper, garlic, raisins, tapioca, curry and thyme.
Let stand 5 minutes.
Pour over chicken. Cover with vented microwave-safe plastic wrap.
Cook on 100% power for 15 to 20 minutes; rearrange chicken after 10 minutes.
Serve over rice.
