Rice Pudding - cooking recipe

Ingredients
    1/2 c. long-grain rice (uncooked)
    6 c. milk, divided
    1/4 tsp. salt
    3 eggs, beaten
    1/3 c. sugar
    1 tsp. vanilla extract
    1 c. raisins
    nutmeg (for garnish)
Preparation
    Rinse rice well; set aside. Scald 4 cups milk. Skim off foam and add rice.
    Add salt and cook over medium heat until mixture thickens, stirring constantly. Add eggs, sugar, vanilla and remaining milk. Stir in raisins; mix well. Transfer mixture to a greased 2-quart casserole dish; sprinkle with nutmeg. Bake at 325\u00b0 for 1 hour.
