Potato-Beet Salad - cooking recipe

Ingredients
    1 jar drained pickled beets
    2 large potatoes, cooked
    1/4 c. parsley
    1/3 c. scallions, chopped, or regular sweet onion
    1 cucumber, diced
    1/4 tsp. Dijon mustard
    4 Tbsp. olive oil
    5 Tbsp. vegetable oil
    2 Tbsp. wine vinegar
    salt and pepper to taste
Preparation
    Dice beets and potatoes.
    Mix with remaining ingredients. Allow to sit several hours before serving.
