Vegetable Frittata - cooking recipe

Ingredients
    3 Tbsp. olive oil
    2 small zucchini, sliced
    3 medium size potatoes, peeled, cooked and sliced
    8 pitted black olives, sliced
    1/3 c. milk
    1/4 tsp. white pepper
    2 Tbsp. chopped parsley
    1 onion, chopped
    1 large red pepper, cut into strips
    8 eggs
    1/2 tsp. salt
    1/2 c. grated Parmesan cheese
Preparation
    In a large skillet, heat olive oil and saute onion for 5 minutes.
    Add zucchini
    and red pepper and saute for 5 minutes or until soft.
    Stir in potatoes and olives.
    Cool.
