Salmon In Apricot Sauce - cooking recipe
Ingredients

4 salmon steaks
1/3 c. firmly packed brown sugar
2 Tbsp. cornstarch
1 tsp. grated orange peel
2 c. orange juice
1 c. dried apricots, snipped
1 Tbsp. sliced scallion
1 tsp. cider vinegar
Preparation

Preheat broiler for 10 minutes.
Place salmon steaks on broiler pan.
Place pan 4 to 5 inches from source of heat and broil for 10 minutes per side.
Meanwhile, combine brown sugar, cornstarch and peel in a medium size saucepan.
Blend juice and apricots.
Stir into dry mix.
Bring mixture to a boil, stirring until it thickens.
Stir in onion and vinegar.
Spoon over salmon steaks during last 2 minutes of broiling.
Serve.
