Canadian Pea Soup - cooking recipe
Ingredients

1 lb. dried yellow peas
1/2 lb. salt pork or 1/4 lb. vegetable fat
2 1/2 qt. water
2 medium sized chopped onions
2 cubed carrots
handful chopped celery with tops
some sprigs chopped parsley
1 tsp. savory
2 bay leaves
Preparation

Wash and soak the peas.
Put them in a large saucepan with all the ingredients.
Bring to a boil and let boil 2 1/2 to 3 hours or until peas are cooked.
Season with salt and pepper (a few kernels of hominy corn may be added towards the end of the cooking time.) Serve as is or pureed by passing the soup through a sieve or a mincer or blend in an electric grinder beater.
