Chickpea Salad(Serves 6) - cooking recipe
Ingredients

4 c. cooked chickpeas
3 Tbsp. olive oil
1 Tbsp. wine vinegar
1 tsp. ground cumin
1/2 tsp. dried thyme
2 Tbsp. chopped parsley
1/2 lb. shredded Swiss cheese
1/2 lb. shredded Cheddar cheese
1/3 c. chopped scallions
4 small quartered tomatoes
4 hard-boiled eggs
1 c. Italian dressing
1/2 head lettuce
Preparation

Combine the cooked chickpeas with the olive oil, vinegar, cumin, thyme and parsley.
Marinate for two hours.
