Risotto - cooking recipe

Ingredients
    1 whole chicken
    6 potatoes
    1 pkg. carrots
    3 large onions
    6 stalks celery
    3 Tbsp. salt
    2 Tbsp. pepper
    grated cheese
    2 1/2 c. long grain rice
Preparation
    Bring 6 to 8 quarts water with above ingredients (except rice and grated cheese) to a boiling point.
    Skim top of water of excess fat; turn down to simmer for 2 to 3 hours.
    Strain broth into another pan; bring to rapid boil.
    Add rice.
    Cover and cook for about 20 minutes.
    Add broth as needed to rice.
    Spread rice on dish; sprinkle grated cheese on top.
    Serve chicken and vegetables on side.
