Red Beans And Rice - cooking recipe

Ingredients
    1/2 c. chopped onion
    2 Tbsp. butter
    1 1/3 c. precooked rice
    1 tsp. salt
    1/8 tsp. pepper
    2 c. liquid (bean liquid plus tomato juice)
    2 c. drained kidney beans (red)
    1/2 c. shredded sharp cheese
Preparation
    Saute onions in butter in saucepan over medium heat until tender. Add precooked rice, salt, pepper and liquid.
    Bring to boil uncovered.
    Cover and simmer gently for 3 minutes.
    Add beans to rice.
    Serve with shredded sharp cheese on top.
    Yields 4 to 6 servings.
