Seafood Gumbo - cooking recipe
Ingredients

4 slices bacon
4 thick slices hot rolled sausage
4 Tbsp. flour
2 large green peppers
5 pods crushed garlic
1 can (8 oz.) tomato sauce
4 c. cold water
3 hot sausages
1 c. crab meat
approximately 18 pods fresh okra
2 to 3 lb. shrimp
oysters (optional)
1 to 2 Tbsp. seafood seasoning
Tabasco to taste
Preparation

Fry the bacon and sausage slowly until crackling.
Remove cracklings from pan.
In the hot grease, slowly work the flour until it is a very, very dark brown.
Do not burn.
This is a slow process, but if it does scorch, throw it away and start over.
It must be dark brown but not burned.
Now add the chopped onions, stirring constantly until they are transparent.
Add chopped green pepper and saute with onion until soft.
Add the can of tomato sauce.
Work this in with roux, onions and green peppers.
