Zucchini Pickles - cooking recipe

Ingredients
    zucchini (about 3 gal.)
    2 c. slacked lime
    2 gal. water
    2 qt. vinegar
    9 c. sugar
    1 Tbsp. pickling spice
    1 tsp. green coloring
Preparation
    Peel and chunk the zucchini.
    Mix with the lime and water. Let stand 24 hours.
    Stir twice a day. Drain and rinse in cold water. Let stand in cold water 12 hours.
    Heat the vinegar, sugar, pickling spice and coloring.
    Let stand 12 hours.
    Cook 35 minutes.
    Put into hot pint jars and seal.
