Beet Pickles - cooking recipe

Ingredients
    beets
    2 c. vinegar
    2 c. water
    2 c. sugar
    sliced lemon
Preparation
    Cook beets until tender, leaving about 2-inches of stem to prevent bleeding.
    Prepare spiced vinegar as follows: vinegar, water and sugar.
    Mix together.
    Let boil about 2 minutes.
    Tie bags of mixed pickle spices for each jar.
    Remove skim from beets; drop into mixture.
    Put in a slice lemon and bring to boiling point.
    Put in sterilized jars and seal.
