Chicken Vesuvio - cooking recipe

Ingredients
    3 1/2 lb. cut-up chicken
    2 cloves garlic
    1/2 c. canola or olive oil
    1 tsp. rosemary
    4 red potatoes
    1 small onion
Preparation
    Slice onion.
    Peel potatoes and parboil for 15 minutes.
    Saute chicken, garlic and onion in 1/4 cup of oil.
    Add potatoes and 1/4 cup of oil (quarter potatoes).
    Sprinkle rosemary over chicken and potatoes.
    Cover and simmer 15 minutes.
    Turn potatoes and chicken. Cook an additional 15 minutes until chicken and potatoes are golden brown.
