Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dried red kidney beans
    2 large onions, chopped
    2 stalks celery, chopped
    1 medium size green pepper, chopped
    1 clove garlic, minced
    2 tsp. salt
    1/2 tsp. pepper
    1/4 c. chopped parsley or 1 1/2 Tbsp. dry parsley
    2 lb. smoked sausage
    hot cooked rice
    1 good ham bone
Preparation
    Wash beans and add all ingredients except parsley, sausage and rice.
    Cover with water.
    (You can add more water later.)
    You want the beans to make a thick gravy.
    Cook covered until beans are done.
    Add sausage and parsley and cook 15 to 20 minutes longer. Serve over hot rice.
