Potato Pancakes - cooking recipe

Ingredients
    2 eggs, well beaten
    2 Tbsp. flour
    1 tsp. baking powder
    1 tsp. salt
    4 medium potatoes
Preparation
    Chill pared potatoes in ice water for 2 hours before grating. Finely grate potatoes and measure 2 cups full.
    Place grated potatoes in towel and squeeze out water.
    Combine potatoes, eggs, flour, baking powder and salt. Drop by tablespoon onto hot, well-greased griddle. Cook over moderate heat about 5 minutes on each side, until golden brown.
    Makes eight 3-inch pancakes.
