Ingredients

6 c. peeled zucchini, grated and squeezed
6 c. sugar
1/2 c. lemon juice
1 c. unsweetened crushed pineapple
1 large box apricot Jell-O
Preparation

Cook zucchini until dry.
Add sugar, lemon juice and pineapple.
Boil for 6 minutes.
Turn off heat.
Add apricot Jell-O.
Put in jars and seal.
