Variations On A Potato Theme - cooking recipe

Ingredients
    5 or 6 cooked potatoes, peeled, sliced or diced
    1 c. milk
    1 Tbsp. butter or margarine
    1 Tbsp. minced parsley
    1 clove garlic, minced
    1 onion, minced
    1 tsp. oregano
    salt and pepper to taste
    3/4 c. shredded Cheddar or Monterey Jack cheese
Preparation
    Melt butter, saute onion and garlic.
    Blend in 3 tablespoons flour and stir until bubbly.
    Add milk and stir until sauce thickens.
    Add potatoes and seasonings.
    Turn into greased pan and bake, uncovered, 35 to 40 minutes at 375\u00b0.
