Healthy Cakes(Muffins) - cooking recipe
Ingredients

2 c. oat bran
1 c. whole wheat flour
1 c. white flour
1 c. oatmeal or bran
1 c. raisins or other dried fruit (to stay fat-free don't use nuts)
2 heaping tsp. baking soda
2 heaping tsp. baking powder
spices as desired: cloves, cinnamon, ginger, nutmeg
vanilla (optional)
2 1/2 c. acid liquid (skim milk with tsp. vinegar or orange juice, apple juice or any combo)
1/3 c. honey or maple syrup or molasses
2 egg whites or Egg Beaters (for fat-free; 1 egg, if not)
fruit (bananas, cored and sectioned apples with skin on, nectarines, etc.) or 2 c. pumpkin or grated zucchini and carrot
Preparation

In a large bowl, mix together oat bran, wheat flour, white flour, oatmeal or bran, raisins, baking soda and baking powder. Add spices as desired.
If using vanilla, add to blender.
