Partridge With Garlic - cooking recipe

Ingredients
    4 partridges
    3 chicken livers or grouse livers
    1 Tbsp. butter
    1/4 c. bacon fat
    2 scallions, minced
    22 cloves garlic, skins removed*
    2 sprigs parsley
    1/2 c. wine
    1/2 c. tomato sauce
    juice of 1 lemon
Preparation
    *Remove garlic skins by dropping cloves into boiling water for a minute, then peeling.
