Breakfast Fajitas(Good Anytime!) - cooking recipe

Ingredients
    2 Tbsp. margarine
    1 medium onion
    fresh mushrooms (optional)
    1/2 c. shredded cheese
    1 pkg. flour tortillas
    1 large potato
    1/2 red or green pepper
    4 to 5 eggs
    salt to taste
    ham or bacon (optional)
Preparation
    Melt butter or margarine in a large skillet; saute potato (may be previously baked or fried), onion, green pepper and mushrooms (if desired).
    To the skillet, add beaten eggs and cheese.
    Cover skillet to set eggs; cook over low heat until eggs are completely cooked.
    Roll individual, warm tortilla shells with a slender slice of egg mixture, topped with salsa, cheese and any other additions you wish.
