Stuffed Chicken Breasts - cooking recipe
Ingredients

2 c. Ricotta cheese
1 egg
1/2 lb. fresh spinach, washed, dried and chopped
2 cloves garlic, finely chopped
1/2 c. grated Parmesan cheese
1/2 c. grated Swiss cheese
salt and pepper
4 whole chicken breasts with skin
Preparation

Mix all ingredients except chicken. Rinse and pat chicken breasts dry. Separate skin from flesh, leaving skin attached at center of each breast. Place a fourth of stuffing under the skin of each breast. Tuck skin edges under; secure with toothpicks if necessary. Place breasts in a baking pan skin side up and dot with butter. Bake at 350\u00b0 about 35 to 45 minutes, basting every 10 minutes with juices.
