Eggplant Patties - cooking recipe

Ingredients
    1 medium eggplant
    1 1/4 c. cracker crumbs
    1 1/4 c. Cheddar cheese, shredded
    2 eggs, beaten
    2 Tbsp. chopped parsley
    2 Tbsp. chopped green onions
    1/2 tsp. salt
    1 clove garlic, minced fine
    1/8 tsp. black pepper
Preparation
    Pare and core eggplant and cook in water 5 minutes.
    Drain and mash.
    Add to other ingredients.
    Mix well and shape into 8 patties.
    Fry in hot oil until golden brown on each side.
