Jamaican Peas And Rice - cooking recipe

Ingredients
    1/3 pkg. dried peas (kidney, black-eyed, pigeon peas)
    2 Tbsp. raw bacon, chopped
    1 clove garlic, chopped
    1/4 c. diced onion
    1 tsp. thyme
    2 c. rice
    salt to taste
Preparation
    Wash peas.
    Boil in 4 cups water for 2 minutes.
    Turn off heat. Cover and let sit one hour.
    After 1 hour, boil covered until tender.
