New Potatoes With Basil Cream Sauce - cooking recipe

Ingredients
    2 lb. new potatoes, unpeeled and sliced
    2 Tbsp. dry white wine
    2 Tbsp. finely chopped shallots
    1 1/2 c. whipping cream
    1/4 c. chopped fresh basil
    1/4 tsp. salt
    1/8 tsp. white pepper
Preparation
    Cook potatoes in boiling salted water, covered, for 10 to 15 minutes. Drain carefully, leaving skins intact.
    Keep potatoes warm. Combine wine and shallots in a large saucepan. Bring to a boil and cook 1 minute.
    Add whipping cream. Return to a boil. Reduce heat and simmer for 20 minutes. Stir in basil, salt and pepper. Arrange potatoes on a serving plate.
    Spoon sauce over potatoes. Serve immediately.
    Yields 8 servings.
